Gipsy bread (punya) with wild garlic and bacon


– 2000g flour
– 50g yeast
– 1 tbsp salt
– 300g smoked bacon, diced
– handful wild garlic leaves



Fry the diced bacon in a pan. Chop the wild garlic leaves and add to the pan, stirring thoroughly.

Mix the flour, yeast, salt and add the mixture of bacon and wild garlic. Cream the yeast with warm water and leave until frothy. Add to the flour mixture with a little warm water and mix thoroughly to a soft dough. Knead it for a few minutes, until the dough no longer feels sticky, than place in a baking tray, cover it and leave in a warm place to rise for about 50 minutes. Bake the bread for an hour until golden and risen.
